How to cook fresh green beans
There are lots of ways you can cook fresh green beans – steam, saute or roast them! For this Italian green beans recipe – we actually steam and saute them!
- Place trimmed green beans in a microwave-safe bowl with 1/4 cup of water. Cover and microwave to steam for 3 minutes.
- Drain green beans and rinse with cold water.
- Melt butter and olive oil in a heavy large skillet over medium heat.
- Add shallots & garlic to the pan. Saute until tender – about 2 min.
- Add tomatoes, basil and oregano and cook about 3 minutes. Then add green beans to the pan and stir together. Cook until the juices have almost evaporated and the beans are almost tender, stirring often, about 7 minutes.
- Add the wine and simmer about 2 minutes more.
- Remove from heat and sprinkle with salt & pepper. Grate on a little fresh parmesan cheese and serve!

Tips, Tricks & FAQs
You can use frozen green beans – you can just skip the steaming step. For canned green beans, be sure to drain them completely and wait to add the beans until you add the wine. They just need a couple of minutes to reheat.
Yes – you can either steam or blanche them on the stove top. Bring a large pot of salted water to a boil. If steaming – you just need 2-3 inches of water and then place a steamer basket on top. Steam for 5 minutes. If blanching, fill pot 2/3 full with water and boil them for 3-4 minutes. Then drain and rinse with cold water.
Sure! If using fresh basil, wait and add it at the end when you sprinkle on the Parmesan cheese as it will taste brighter and fresher.
Store leftovers in an airtight container (I like these glass ones) in the refrigerator for up to a week. You can freeze up to three months. Reheat in the microwave for 1 minute.
