Air Fryer Lasagna Rolls are a delicious way to have cheesy, comforting, saucy lasagna in less than 30 minutes! Full of sausage, mushrooms and cheese – lasagna rolls are an easy weeknight meal!

Lasagna Roll Ingredients

You’ll need all the usual suspects when it comes to lasagna ingredients to make these delicious lasagna rolls.

  • Lasagna Noodles – you’ll need to use the kind you BOIL, not the oven-ready
  • Italian Sausage – you could also swap with ground beef, ground turkey or even grilled chicken
  • Cheese – ricotta cheese & mozzarella cheese – some folks swap cottage cheese for ricotta but I just can’t do it!!!!
  • Eggs – this serves as a binder for the cheeses
  • Mushrooms – I’m a mushroom lover but you could leave these out or go all veg!
  • Marinara Sauce – grab your favorite jar of sauce
  • Seasoning: Italian seasoning & Fresh Basil – you can also add oregano, garlic, salt and black pepper but most of that is already in the sausage
  • Topping: Parmesan cheese, bread crumbs & melted butter

How to Make Air Fryer Lasagna Roll Ups

Making lasagna rolls in the air fryer speeds up the cooking process with the convection air that circulates and cooks more quickly.

  • In a skillet over medium high heat, brown sausage. Once sausage is mostly browned, add mushrooms. Drain sausage & mushrooms and set aside. 
  • In a large pot, boil noodles according to package instructions – just to al dente – should be cooked but firm
  • In a medium bowl, mix ricotta, mozzarella, eggs and Italian seasoning. Add sausage & mushrooms into cheese mixture and stir.
  • Spray a baking dish or cake pan (that will fit in your air fryer) with nonstick cooking spray. Pour 1/2 marinara into dish. 
  • On a cutting board, lay out lasagna noodles. Spread ricotta mixture on noodles. Layer basil leaves on top of noodles. Tightly roll into roll-ups.

  • Place lasagna rolls seam side down or on ends in dish with marinara. Place dish in air fryer basket and air fry at 350°F for 10 minutes of cook time. OPTIONAL: Pour remaining marinara over top of noodles. 
  • While roll-ups are cooking, mix Parmesan, breadcrumbs, and melted butter. 
  • Open air fryer and sprinkle bread crumb mixture on top of roll-ups. Air fry 3 minutes more. 
  • Using potholders, remove pan from air fryer. Let lasagna rolls cool slightly before serving. 
  • For extra flavor, serve with a sprinkle of fresh basil and parsley

Tips, Tricks & FAQs

Can I Make Lasagna Roll-Ups Ahead?

Yes – be sure to cover tightly with plastic wrap so the noodles don’t dry out. You can also put into a glass containers and freeze before you bake – then pull out and air fry any time!

Can you use oven-ready lasagna noodles?

Yes – you just need to boil them for 3-4 minutes so the noodles are pliable enough to roll up.

What type of pan can I use in my air fryer?

Any oven safe dish – I used a cake pan but a regular baking dish would be fine as well.

How do you store and reheat leftover lasagna rolls?

Store leftovers in an airtight container (I like these glass ones) in the refrigerator for up to a week. You can freeze up to three months. Reheat in the microwave for 2-3 minutes.

  • Zucchini “Noodles” – swap your pasta with zucchini noodles for an even healthier dish.
  • Cheese Only – leave out the sausage and add a little extra cheese for a vegetarian swap.
  • More Veggies – slice up more veggies and layer in with the mushrooms. Zucchini, onions or blanched broccoli would all be good in these lasagna rolls.
  • White Chicken – swap out the sausage and mushrooms for chicken and spinach and use alfredo instead of marinara for White Chicken Lasagna Roll-ups.

Ingredients
  

  • 10 lasagna noodles NOT oven ready, the kind you boil
  • 1 lb Italian sausage
  • 4 oz button mushrooms sliced
  • 2 cups ricotta cheese
  • 2 cups mozzarella cheese shredded
  • 2 eggs
  • 2 tsp Italian seasoning
  • 24 oz marinara sauce
  • 1/2 cup fresh basil leaves
  • 3 tbsp Parmesan cheese grated
  • 3 tbsp bread crumbs
  • 2 tbsp butter melted

Instructions

    24 oz marinara sauce
