What You Will Love About Zucchini Parmesan

Zucchini is so cheap and plentiful all summer long – I like to try and find as many ways as I can to enjoy it! I decided to take my favorite potato recipe and use zucchini instead! The dijon and parmesan are a great combo for crunchy & flavorful!

These zucchini side dish is also not breaded – with the parmesan cheese – you don’t need it! Try my spicy air fryer zucchini fries if you’re looking for something more crunchy with the help of panko bread crumbs!

Air Fryer Zucchini Parmesan Ingredients

Once you have zucchini, the rest of the ingredients are from the pantry. This low-carb side dish was enough for 4 people when served with meat & potatoes.

  • 2 small zucchini, sliced
  • 1 teaspoon salt – I always use coarse sea salt
  • 1 teaspoon ground black pepper
  • 2 tablespoons Dijon mustard
  • 3 tablespoons grated Parmesan cheese

How to Make Zucchini Parmesan in the Air Fryer

The prep takes about the same time as the cooking time for this recipe. Go light with your dijon but heavy with the Parmesan for the perfect balance.

I did use my oven-style air fryer for this recipe solely because of the space that provides. You can easily make this in your air fryer basket – you might just need to use a cooking rack or do it in batches.

  • Wash zucchini but do not peel
  • Slice zucchini thinly and lay zucchini slices in a single layer on a piece of parchment paper
    • If you don’t have parchment paper, be sure to spray tray with non-stick cooking spray
    • Oven-style air fryer – use parchment paper sheets
    • Basket style air fryer – use shaped sheets that fit your basket
  • Sprinkle zucchini lightly with salt and pepper.
  • Using a silicone baster, brush slices lightly with dijon mustard
  • Sprinkle Parmesan cheese over top of all zucchini slices
  • Place parchment paper into air fryer. Air fry at 400°F for 10 minutes.
  • Remove from the air fryer and serve.
    • OPTIONAL: Serve with a side of ranch, marinara sauce or a squeeze of fresh lemon

Tips, Tricks & FAQs

How do you cook zucchini so it doesn’t get mushy?

For this recipe, the key is slicing the zucchini fairly thin. This will add a little crispiness as the zucchini air fries.

You can also sprinkle zucchini with salt and let rest for 5 minutes and then pat dry with paper towels to pull out a little moisture from the slices.

Is fried zucchini good the next day?

Well. I would try and just make enough for you to eat at the time. If you have leftovers – yes – you can reheat them.

How do you store and reheat leftover zucchini?

Store leftovers in airtight containers in the refrigerator for 1-2 days. Reheat in the air fryer at 325º for 3-4 minutes.

Variations

  • Seasoning – I love the flavor of Dijon mustard, but feel free to add more seasonings like Italian seasoning, garlic powder, paprika or minced fresh herbs.
  • Make it spicy – Add a sprinkle of red pepper flakes or cayenne pepper.
  • Ranch – Brush your zucchini with a little ranch dressing or sprinkle with ranch seasoning and even serve with a little cup of ranch to dip on the side.
