Copycat Gold Star Chili Garlic Parmesan Fries

Gold Star Chili’s Garlic Parmesan Fries are SO AMAZING! Seriously – I’ve worked with Gold Star Chili for a few years and when they introduced these fries – everybody at the dinner was scarfing them down! They’re crinkle fries topped with this yummy Garlic Aioli then sprinkled with Parmesan and fresh dill. So good!

Since I’ve worked with Gold Star, I reached out to see if they would share the recipe with me – and they did! Not only that, they invited me out to their headquarters here in Cincinnati to meet with the Head Chef and learn from him! How fun!
My favorite part was they didn’t have a fryer at his location – so I brought my air fryer! Chef John got to teach me his recipe and I got to teach him about the wonders of the air fryer!

What is Aioli?
So you’ll notice I referred to the Garlic Parm sauce as aioli – well what is that? Basically – it’s garlic mayo. If you make it from scratch – you make it with egg yolk, lemon juice, mustard, and olive oil – which is the ingredients for mayo – but you also add garlic! A lot of garlic!

How do you make Garlic Parmesan Fries?
The Garlic Aioli is super quick – so get your fries started! In the air fryer, the frozen french fries took about 12-15 minutes. While those are frying, whisk together mayo (Chef John and I agreed on using Duke’s!), lemon juice, garlic powder, salt, pepper and a touch of water. Really whisk it – put your elbow into it! After that, put it into a squeeze bottle and refrigerate until ready to serve.
When the fries are ready, squirt a load of your Garlic Aioli on the fries and then sprinkle on grated Parmesan and fresh dill. Be sure to use FRESHLY grated Parmesan – NOT the stuff that’s pre-grated from the store – the flavor does not compare and it takes 30 seconds to grate yourself.

What can you use the leftover aioli on?
This recipe makes 1 cup of Garlic Aioli – so you’ll probably have leftover aioli. What to do with it? It’s great on hamburgers or chicken sandwiches. Another great usage is to dip all your air fryer vegetables in (like my air fryer carrot fries) or you can even spread some on a chicken breast before you air fry or bake it. That mayo really seals in the juices!

What is Gold Star Chili?
Now for anybody in the Cincinnati area – you can skip this section! But I sent a photo of the fries to my friend Steph in Alabama and she asked, “Do you put chili on it?” because of the chili in the background. Nope! If you’re not familiar, Gold Star Chili is a local Cincinnati chili parlor. If you haven’t had Cincinnati chili – it’s very different from Texas chili. It’s thinner, the meat is nearly pureed and it’s got cinnamon and cocoa powder in it – it’s a little wild! It’s also served on top of spaghetti with about three inches of cheddar cheese. Yup yup! It’s tasty!
What to serve with Garlic Parmesan Fries?

Ingredients
- 1/2 bag french fries
- 1 cup Duke's Mayonnaise
- 1 tbsp lemon juice
- 1 tbsp garlic powder
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 tsp water
- 3 tbsp freshly grated Parmesan cheese
- 1 tbsp chopped fresh dill
Instructions
- Bake or air fry french fries according to package directions (air fry – same temp, half time)
- In battery bowl, whisk together mayonnaise, lemon juice, garlic powder, salt, pepper and water to make garlic aioli.
- Place in squirt bottle and refrigerate until ready to use.
- When the fries are ready, squirt aioli over fries.
- Sprinkle with Parmesan and fresh dill.
I LOVE these! I always have to ask for extra garlic parm sauce though, as I’m lucky if they at least put a couple of teaspoons on there.

I’m confused. In the video he says to use 1/8 cup of garlic powder. In your recipe it says 1tbsp. Also the amount of lemon juice is different than the video. He says 1/8tsp. You have 1TBsp.? Then the 1 tsp water to him saying 1/2TBsp. I’m very confused. So how much garlic powder do I use
He said 1/8 cup garlic and 1/8 cup lemon juice to 2 cups mayo – i cut in half and used 1 tbsp each to 1 cup mayo
