eMeals Recipe: Orange Teriyaki Beef Noodle Bowl

As I mentioned a couple of weeks ago – a friend and I have joined eMeals.com. It’s an online meal planning tool. You pick your plan (low fat, Paleo, gluten free, etc…) and whether you want 1-2 servings or 4-6 servings – and then boom – you get meal plans every week! Sometimes you can even pick your grocery store and it will match up your meal plans with what’s on sale at your store.
With this new meal plan – I’ve been trying a variety of meals from the low-fat plan and really liked this Orange Teriyaki Beef Noodle Bowl:
I like these recipes because most of the time – I have a lot of the ingredients on hand already. It’s nothing you have to go and buy every single item – the only thing I had to buy here was the beef and the vegetables.
I bought the pre-cut stir fry beef because it was actually cheaper than the whole round steak!
Then add broken angel hair pasta. I ended up using thin spaghetti which took longer to cook. Also – I think that when I make this again – I’ll either break the pasta into 1 inch pieces or just in half. These two inch pieces were pretty much impossible to eat! They weren’t long enough for the fork and too long for the spoon. Frustration ensued!
This was really delicious! I cut the recipe (listed below) in half-ish because I’m only cooking for 1-2. I used the full amount of marmalade though because I wanted to make sure I could taste the orange and it was perfect! I really enjoyed this one and took the leftovers to lunch a couple days.
Orange Teriyaki Beef Noodle Bowl

Cook: 15 minutes
Servings: 4-6
Ingredients:
1 lb. thin cut round steak, thinly sliced
16 oz pkg frozen vegetables, stir-fry mix
2.5 cups beef broth
1/4 cup teriyaki sauce
2 T orange marmalade
1 T soy sauce
3 cups uncooked angel hair pasta, broken into 2-inch pieces
Instructions:
1. Spray a large nonstick skillet with cooking spray; heat over medium-high heat
2. Add beef and cook until browned, remove from pan
3. Add stir-fry mix, broth, teriyaki sauce, marmalade and soy sauce to pan
4. Bring to a boil; add pasta, reduce heat and cook 4 minutes or until pasta is tender
5. Return beef to mixture; cook until thoroughly heated
Looks good and I love those stir fr veggies. I use those in a lot of my meals…so handy!
