eMeals Subscription & Ham Stroganoff

My friend Lauren and I have decided to try an online meal planning program called eMeals
. It’s really affordable and has a good variety of recipes.
If you’re not familiar with eMeals, it’s an online program where you sign up for anywhere from 3 months to a year and get new recipes each week with a grocery list. The great thing is the list is numbered by recipe – so if you’re not going to make one of the recipes – you just mark that number of your list!
There are 11 meal plans to choose from and the prices range from $21 (3 months) to $58 (12 months) – which when you think about new meals each week – is pretty cheap! Even if you don’t use every meal – it’s still so easy to just get an email each week and then – boom – recipes for the week & a grocery list!
I came across a recipe for Ham Stroganoff and thought that would be something that Larry would actually like – so it was worth a shot. First you saute the ham, mushrooms and onion in butter.
Then you add cream of chicken soup, milk, seasonings and sour cream – Stir stir stir…simmer simmer.
Then serve over biscuits!
It’s an extremely easy recipe to make and definitely comfort food. It sort of reminds me of creamed chipped beef that my Dad used to make me as a kid. The one thing I’d be sure to do next time is rinse the ham because it was a little too salty for me.
Healthy Ham Stroganoff – emeals Low Fat Plan
Ingredients

10 oz can
refrigerated reduced-fat biscuits -
2 T
butter -
1/2 cup
chopped onion -
16 oz
diced ham, rinsed -
10 oz can
fat free cream of chicken (or mushroom) soup -
3/4 cup
fat free milk -
1/2 tsp
thyme -
1/4 tsp
pepper -
1 cup
fat free sour cream -
1 cup
sliced mushrooms (optional)
Cooking Directions
- Bake biscuits according to package directions.
- Melt butter in a large skillet over medium heat.
- Add onion, ham and mushrooms; cook, stirring frequently, until onion is tender.
- Add soup, milk, thyme and pepper; cook for 10 minutes, stirring constantly.
- Stir in sour cream and cook just until thoroughly heated.
- Split biscuits; serve ham mixture over biscuits.
