Food Hussy Recipe: Blueberry Vinaigrette

I had just picked up Blueberry Jam from IKEA and thought it would make a great vinaigrette. I have a raspberry dressing I like a lot – so why not blueberries? Once I opened the jam – I knew I was in for something delicious! The jam was packed with blueberries and was super thick – I might have dove in and tried some. 🙂

Salad dressings are so easy to make – it’s a wonder why we ever buy them at the store?! Blueberry Vinaigrette is pretty simple and uses just four ingredients: blueberry jam (or preserves), dijon mustard, balsamic vinegar and olive oil – boom you’re done!
Now I don’t typically get out the blueberry jam and think – let’s throw some mustard in there! But trust me – it works… You whisk the blueberry, mustard, vinegar and little water together – then slowly add the olive oil. Whisky whisk and you’re done!
It’s really great on any salad – but one with fruits or juicy vegetables like these grape tomatoes and some cheese like feta or goat are especially good! Plus since you made the dressing yourself – you know exactly what’s in it!
Blueberry Vinaigrette
1/4 cup blueberry jam
1 T Dijon Mustard
1 T Balsamic Vinegar
1/8 cup water
1/8 cup olive oil
Whisk together blueberry, mustard, vinegar and water. Slowly whisk in oil. Refrigerate for up to one week. Shake before serving. Makes enough for 3-4 salads.
