TikTok is at it again with another trend for breakfast: Grated Egg Avocado Toast! I’m not sure why I hadn’t thought to grate a hard boiled egg but I love it! It’s so light and fluffy. It matches well with the creaminess of the avocado and the only seasoning you need is a pinch of coarse salt!

Only five ingredients needed for this delicious breakfast:

  • hard boiled eggs – make sure the egg’s yolk is at least medium-hard so they grate cleanly
  • bread – I like to use Sara Lee Artesano Brioche Bread – it’s thick and can stand up to all the toppings
  • avocado – be sure you have a ripe avocado – it should give a little when you squeeze it
  • butter – just a teaspoon of butter adds flavor
  • coarse sea salt – I like to keep it simple with just a little salt

TikTok is always coming up with fun ideas – here’s how to make this new avocado toast:

  • Grate hard boiled egg on fine side of cheese grater
    • a microplane grater or zester might be a little too fine but should work as well
  • Toast bread in toaster
  • Slice avocado in half and remove pit. Then peel the avocado (it peels so easily) and slice
  • Butter toast and top with 1/2 sliced avocado and grated hard boiled egg
