These Traeger Smoked Stuffed Burgers are the best burgers I’ve had! A delicious burger with simple seasonings and a perfect smoke ring – filled with cheddar cheese, smoky bacon and caramelized onions!

Stuffed Burger Ingredients
Smoked Stuffed Burgers can be made so many different ways! I went for simple seasonings and meat, cheese & veggies for the stuffing!
- Ground pork – I love using ground pork – it’s got more flavor and is consistently more affordable than ground beef! At Kroger, it’s $1.99 vs $5.49! THAT is savings!
- Ground beef – I also added in ground beef – they go very well together. I use 80/20 which is a ground chuck – but you can also use a more lean ground beef since you’re pairing it with the pork.
- Burger Seasoning: Worcestershire sauce, Salt & Black Pepper, Minced garlic, Onion powder – I like to keep the seasoning simple for this burger recipe because we’re stuffing the burgers with extra goodies!
- Stuffing: Bacon, Onion, Cheddar Cheese – I wanted more than just cheese in here. You will need to cook the bacon and onion before stuffing the burgers.
- Brioche Hamburger buns

Recipe Variations
You can stuff and season these burgers with lots of things – here’s a few ideas for you!
- Cheese – get creative with your cheeses! Cheddar, Mozzarella or even Cream Cheese!
- Veggies – I made caramelized onions but sautéed mushrooms would also be delicious paired with Swiss cheese
- Dip – lots of folks use Onion Soup Mix – but you can also throw in some French Onion Dip for a similar flavor!
- BBQ Burgers – season with your favorite BBQ seasoning, stuff with a sharp cheese and then baste with BBQ sauce!

How to make Stuffed Smoked Burgers
Stuffed burgers take a little longer prep time and you need a couple lbs of meat – but oh they are worth it in the end. The Traeger makes the smoking so easy!
- Dice bacon slices and onion. In a large skillet over medium-high heat, cook bacon and onion until bacon is cooked through but not crispy. Set aside in a small bowl.
- Preheat smoker to 225º
- In a large bowl, combine ground pork, ground beef, worcestershire, salt, pepper, garlic and onion powder. Mix well to combine and form into 8 thin patties (about ¼” thick)
- Once bacon and onion has cooled a bit, add cheese and stir together.
- Arrange 4 patties on a cutting board. Place 2 tbsp of bacon and cheese mixture on center of burger. Top each with remaining patties. Pinch the edges to seal.
- Place patties directly onto the grill grate and close the lid. Smoke for 1 hour until internal temperature hits 140-145 degrees F – you can check with an instant read thermometer. Be sure you’re checking the temp of the burger and not the stuffing.
- Brush inside of each bun with melted butter. Place burger buns onto grill grates for 5 minutes towards the end of cooking time.
- Arrange burger patties and top with pickles, lettuce and tomatoes

Tips, Tricks & FAQs
There are many flavors of pellets that work in your Traeger pellet grill. I keep it simple and always use the Traeger Signature Blend which is a blend of Maple and Cherry. That said if you’re looking for something specific for beef – the best are Hickory, Mesquite & Pecan.
Yes – sure! You can just make smaller thinner patties and spread out the filling between the patties. Or use less pork/beef to make thinner burgers.
I used 1/4 cup in each burger and it wasn’t gooey – so I would say either put in diced cheese vs. shredded or overload the center with cheese.
Yes – you can use ground chicken or ground turkey – but you won’t want to mix those with pork or beef.
These 1/2 lb burgers took an hour – smaller burgers might take a little less time.
You don’t really need to flip them! I did mainly just for the grill marks on both sides – but the smoke and temp surrounds the burger – so no need to flip.
Store leftovers in an airtight container (I like these glass ones) in the refrigerator for up to a week. Reheat in the microwave for 2-3 minutes.
