Recipe time again! BBQ Beef Filled Biscuits

I’ve been cooking up a storm. Today’s recipe – Barbecue Beef Biscuit Cups. I’m always looking for simple and easy recipes and this one completely fits the bill – it really doesn’t get much easier (and it’s on the table in less than 30 minutes!)

These little guys are great because you can eat them with your hands (so the kids will love them) and you can customize to what your family likes. Like mushrooms? Great – keep them in! Don’t? Leave them out! You could even swap out ground beef for ground turkey or ground chicken if you want them a little healthier! (I made these with Laura’s Lean Ground Beef so there was very little fat!)

The first time I made them, I used Aldi biscuits that were “jumbo” sized and they were too big. This time I used the small (cheap) biscuits and they were perfect. If you use full pound of ground beef – you might have a little extra of the filling – but just pop it in a container and have it for lunch the next day!
I really loved these biscuit cups – it took about 10 minutes to brown the ingredients and then they go in the oven for about 13 minutes – and then you’re done! I chopped the veggies while the ground beef was getting started – so it was quick and easy! 
 Barbecue Beef Biscuit Cups

Ingredients

  • 3/4 lb
    extra-lean ground beef
  • 1 small
    bell pepper, finely chopped
  • 1/2 pkg (4 oz or 8-10)
    button mushrooms diced
  • 1/3 cup
    KRAFT Original Barbecue Sauce
  • 1 can small
    refrigerated buttermilk biscuits
  • 1/3 cup
    Shredded cheese

Cooking Directions

  1. HEAT oven to 375ºF.
  2. BROWN meat with peppers and mushrooms in medium skillet. Remove from heat. Stir in barbecue sauce. Feel free to undercook a little as they’ll be in the oven soon.
  3. SEPARATE biscuits. Press 1 biscuit onto bottom and up side of each of 8 muffin cups.
  4. SPOON meat mixture into biscuit cups; press into cups with back of spoon. (Filling will be mounded.)
  5. BAKE 10 min. or until biscuits are lightly browned. Top with cheese; bake 3 to 4 min. or until melted.

  1. ewwww! Now that I live in the South – this isn't BBQ… and no one in my house would eat this!!! ewwwww!!!!!!!!!!!!!!!

  2. Yeah – not really BBQ but for a quick dinner – it wasn't bad – like manwich without the bun.

    Sometimes I'm fine with simple.
