Recipes: Trio of Super Simple Fall Desserts (Pumpkin Fluff, Pumpkin Dump Cake, Pineapple Dump Cake)

I have had a great time going on Local 12/Star 64 (and my favorite guy – Bob Herzog) – if you’ve missed any of my performances – check out my YouTube channel!
And I got the chance to go on again yesterday and share some super simple pumpkin recipes! Plus – I decided to have Bob help me out.

I decided to make two recipes on their new extended morning show (8-9am on Star 64) – Pumpkin Fluff and Pumpkin Dump Cake – which Bob then turned into a new recipe – Fluffy Dump Cake! Catch the video at the bottom to check it out!

The Pumpkin Fluff is super simple and is very versatile – serve it with fruit, graham crackers – or heck – a dollop on Pumpkin Pie!
 
Pumpkin Fluff
* 1 large can canned pumpkin
* 1 container Cool Whip Free
* 1 package vanilla pudding mix (the dry mix)
* Pumpkin Pie Spice
Stir together pumpkin, Cool Whip and vanilla pudding mix. Sprinkle in pumpkin pie spice (as much or as little as you like). Refrigerate for an hour or so and then serve!

 

The other recipe turned out to be versatile as well – because I made it two ways! First I made it with pumpkin. And I’m not actually a huge pumpkin fan – but I have to admit – it’s really good! It’s not really a “cake” texture – it’s sort of a cakey-pudding. The full recipe makes enough for an 9×13 pan but you can easily split it up into smaller dishes like I did.

Second – I made it with Pineapple!! I swapped out an ingredient to fit with pineapple and I have to say – everybody LOVED IT! People swarmed on it and loved it even more than the pumpkin! I’ll give you all the details after this short message…

Okay – it’s really just my super awesome video with me and Bob from yesterday… 🙂
So here are the recipes that I’m now in love with for Dump Cake!!! (also egg-free!)
Pumpkin Dump Cake 
* 1 large can canned pumpkin
* 1 box yellow cake mix
* Pumpkin Pie Spice
* Pecan halves

* 1 stick butter, melted

Preheat oven to 350. Spray your baking dish with non-stick spray. (dump) Spread canned pumpkin in bottom of dish. (dump) Spread dry cake mix on top of pumpkin. (dump) Arrange pecans on top of cake mix. (dump) Sprinkle pumpkin pie spice all over the top of the cake mix & pecans. (dump) Pour melted butter on top of it all – try and cover all the mix. (dump) Bake at 350 for 50-60 minutes.
It’s a little tricky to tell when it’s done – stick a toothpick in and it should come out clean (much like regular cake) – but it probably won’t be 100% clean – the fruit makes it still very moist.

Pineapple Dump Cake!

* 1 large can crushed pineapple, drained
* 1 box yellow cake mix
* Brown sugar
* Pecan halves
* 1 stick butter, melted

Preheat oven to 350. Spray your baking dish with non-stick spray. (dump) Spread drained pineapple in bottom of dish. (dump) Spread dry cake mix on top of pineapple. (dump) Arrange pecans on top of cake mix. (dump) Sprinkle brown sugar all over the top of the cake mix & pecans. (dump) Pour melted butter on top of it all – try and cover all the mix. (dump) Bake at 350 for 50-60 minutes.
