Green Bean Casserole Ingredients
Green Bean Casserole is way more than some of those French-cut canned beans of our childhood! Fresh ingredients ramp it up – but yeah – we’re still using canned soup! ๐
- 8 oz fresh sliced mushrooms
- 3 tbsp butter
- 2 tsp minced garlic (1-2 cloves garlic)
- 32 oz package frozen cut green beans
- 26 oz can cream of mushroom soup
- 1/2 cup sour cream – if you like more sauce, add another 1/4-1/2 cup
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup French fried onions

Recipe Variations
There are ways to jazz it up even more and those get AMPLIFIED in the smoker! Here are some ideas:
- Seasoning – this is a pretty traditional version – if you’d like more zing – add 1-2 tbsp worcestershire sauce and 1-2 tsp garlic salt.
- Cheese – lots of folks add cheese to their GB casserole – we never did – but cheddar cheese mixed in or a sprinkle of Parmesan cheese on top with the french fried onions would be great!
- Sausage – add some protein and make it a meal! Lightly brown pork sausage and stir in – yum!
- Layers – Instead of mixing it all together – make it a layered casserole with the beans and mushrooms on the bottom, soup mixture on top of the beans and then onions on top of the soup!

How to make Green Bean Casserole on a Traeger
You can use any smoker to make this – or even a regular grill – but I like using my Traeger! Here’s what you’ll do:
- Preheat Traeger to 275ºF. Lightly coat a 9×13-inch baking pan or disposable pan with non-stick spray. Set aside.
- In a large skillet, over medium-high heat, melt butter. Add mushrooms and garlic and saute for 3 minutes.
- Add green beans to the skillet and cook for an additional 5 minutes to thaw green beans. Transfer vegetables and juices to a large mixing bowl.
- Add cream of mushroom soup, sour cream, salt & pepper to large bowl. Stir to combine.
- Pour the mixture into the prepared baking dish. Top with French Fried onions.
- Place dish on Traeger uncovered for 1.5-2 hours.

Tips, Tricks & FAQs
Store leftovers in an airtight container (I like these glass ones) in the refrigerator for up to a week. You can freeze up to three months. Reheat in the microwave for 1-2 minutes, in the air fryer for 4-5 min or in the oven for 20 min. You may want to add new crispy onions for crunch again.
Yes – you may want to blanch them before adding to the skillet with the mushrooms. Here’s how to blanch them:
* Place trimmed green beans in a microwave-safe bowl with 1/4 cup of water. Cover and microwave to steam for 3 minutes.
* Drain green beans and rinse with cold water.
Technically sure! I use those on the Traeger all the time – this just made too much to fit in a skillet.
Sure – I just put the onions on top – so making it up the night before is fine. Also using the frozen beans helps it from getting soggy.
There are many flavors of pellets that work in your Traeger pellet grill. I keep it simple and always use the Traeger Signature Blend which is a blend of Maple and Cherry. That said if you’re looking for something specific for this – I would go with something strong since it doesn’t absorb the smoke quickly – the best are
Hickory, Mesquite & Pecan.
Yes – you can place a packet of wood chips in aluminum foil next to the charcoal. You will need to change out the wood chips every 30-60 minutes to keep the smoke coming.
