These Spicy Cheese Sticks are a loaded spicy garlic cheese bread like you’ve never had before! I got the idea from Rotolo’s Pizza in Gulf Shores – they call them Chalmette Cheesesticks. Theses sticks have hot sauce on a crispy thin crust and then it’s topped with FOUR kinds of cheese!

  • CHEESE!!!! There are four kinds of cheese on these guys! Feta, Cheddar, Mozz & Parm!!! So much cheese! So much YUM!
  • Spicy – You might think – hot sauce? But that first bite will have you saying HOT SAUCE!
  • Crunchy! I love the thin crust because the edges are nice and crunchy!

Ingredients for Spicy Garlic Cheese Sticks

These Spicy Garlic Cheese Bread Sticks are so cheesy! Four kinds of cheese – you’ll love them! Here’s what you need:

  • Thin Crust Pizza Dough – I bought the Pillsbury Thin Crust – it doesn’t spread out much but it was enough to get 16 good sized cheesy sticks out of it!
  • Frank’s Red Hot Sauce – Love this stuff! You can use your choice but that’s what Rotolo’s uses.
  • Salted Butter – you can use unsalted butter but I always have salted and this is a savory recipe – so it works.
  • Fresh Garlic – this is another recipe where I recommend fresh garlic cloves vs jarlic. It’s a big part of the recipe and you want the strong flavor!
  • Feta cheese – Cheese #1 – I prefer to buy the block and break into coarse crumbs
  • Cheddar cheese – Cheese #2 – For this I would use mild or regular and probablhy not the extra-sharp cheddar cheese
  • Mozzarella cheese – Cheese #3 – Always Mozzarella! Cheese pull!
  • Parmesan cheese – Cheese #4 – For the BITE!

Recipe Variations

These cheese sticks are so yum on their own but feel free to tweak them for your tastes – here are a few ideas:

  • Red Pepper Flakes – sprinkle those flakes on for more spicy! Or you could add some Italian seasoning.
  • Pepperoni – throw pepperoni on and it’s a pizza!
  • More Cheese – you could add some provolone or even chunks of ricotta or fresh mozzarella
  • Mushrooms – cheese & mushroom pizza is my favorite! I would love some shroomies on this cheesy bread!

How to make Spicy Garlic Cheese Sticks

These are so easy – the most time consuming part is grating the cheese – but I bought this snazzy rotary cheese grater so even THAT was easy! (or you can use a food processor)

  1. Preheat oven to 375º
  2. Lightly spray a pizza pan or rimmed baking sheet with nonstick spray
  3. Spread pizza dough over pizza pan into a rectangle
  4. Follow directions on pizza dough. Refrigerated crust directed to pre-bake for 6 minutes. 
  5. While pre-baking crust, melt butter in microwaveable dish for 20 seconds at a time until melted
  6. Remove butter from microwave and whisk in garlic and hot sauce
  7. Remove crust from oven and pour butter mixture onto the pizza crust and use a pastry brush to spread out butter over entire crust
  8. Sprinkle on all four cheeses
  9. Bake for an additional 6-10 minutes until cheeses are golden brown. Change oven to LOW Broil for 2-3 minutes to brown cheese lightly.
  10. Use a pizza cutter to slice into 16 sticks. Sprinkle with more hot sauce and Dip in Ranch Dressing or Blue Cheese Dressing for more fun!

Store leftovers wrapped in aluminum foil in the refrigerator for up to a week. You can freeze up to three months. Reheat in the air fryer at 250º for 4 minutes.

Ingredients
  

  • 1 Thin Crust Pizza Dough
  • 2 tbsp Frank’s Red Hot Sauce
  • 3 tbsp salted butter
  • 3 cloves garlic minced
  • 4 oz feta cheese crumbled
  • 1 cup cheddar cheese grated
  • 1 cup mozzarella cheese grated
  • 1/4 cup Parmesan cheese grated

Instructions
